Making a love interest for a character is a bit difficult.

Anyway, one can wonder how does a write a love interest, especially one that is mortal?
To be honest, Darrel never saw her as an immortal.
To him she was an outstanding PI (private investigator) that gave a million percent and always took a risks in order to get to the bottom of cases.
Those fifty-four years he knew her were not short to him. For the first five he dated her, the remaining years he was married to her and raised children with her (even lost his smoking habit lol).
For him it was a normal life.
It's just that by the end when he closed his eyes they never reopened. And she rejuvenated without him.
He had the most beautiful, smartest, relentless woman as his wife. He'd have it no other way.
